Planning is key when eating healthy “on the go”. We are all busy with work, kids, and just life in general. Fueling up to keep up is important. Below is an easy recipe for a Vegan Quinoa bar I just made. Bonus… It may satisfy that sweet tooth.
Ingredients:
1 cup cooked quinoa
1/4 cup pitted dates
1/4 cup vegan carob chips
6 drops liquid sweetener such as stevia
1 tablespoon tahini
1 tablespoon ground flaxseed
1/4 teaspoon vanilla extract
1/8 teaspoon salt
1/4 cup protein powder (I used Vega One)
1/4 cup flour of choice (I used Gluten-free flour)
Directions:
1. Preheat oven to 350 degrees. In a food processor (or blender) combine quinoa, dates, carob, sweetener tahini, flaxseed, vanilla extract and salt. It will take about 1 minute in food processor. Make sure you scrape sides and restart food processor during that minute to get an even consistency.
2. In a small bowl combine protein and flour. Fold dry mixture into wet mixture. Spread evenly into a 10X5 pan. I used a 10×10 pan and just made two batches of the recipe above. Let cool and serve!
